Ever since I was a child, one of my favourite Sunday dinners has been roast beef. On Sundays when we’re home in the afternoon, I’ll roast the beef in the oven. A lot of times, though, we go out on Sundays to spend time together as a family. On those Sundays, I often cook a roast in my Crockpot so that when we get home in the evening, we have a delicious slow-cooked roast waiting for us.

My family loves this slow-cooker roast even more than when I cook it in the oven. This meal gets a big thumbs-up from everyone. Even little Ayla looks like she’s trying to lift her thumb up (or maybe that’s a so-so gesture that she sees Cole do so often?). Anyway, she ate it all up.
I love how it just falls apart when you cut it, so it’s easy for kids to chew, unlike oven roasts which can be a bit tough. This recipe makes such a beautiful rich gravy. I just thicken it up with a little cornstarch and pour it on top of the roast for added flavour.
I used the leftover meat and gravy to make beef dip sandwiches the next day. Wow! It was so good! I could just drink up that gravy on its own.

Slow Cooker Roast Beef
1 sirloin tip roast, 2-3 lbs
1/4 cup soy sauce
1/4 cup red wine
3 cloves garlic
2 tbsp cornstarch
Place roast in the slow-cooker. Mix soy sauce, wine and garlic. Cook on low for 8 hours. Once cooked, place the drippings in a saucepan on medium heat. Mix cornstarch with 1 cup of water, then pour it into the saucepan while whisking. Continue whisking and bring it to a boil until thickened. Serve gravy over the beef.

I LOVE IT! I got a slow cooker for Christmas and it has sadly been sitting in its box in my bedroom since then. I just unpacked it today and your post is so timely.

I made this recipe the other day and it came out delicious! The meat came out so tender and the gravy was one of the best I’ve ever tried and I’m not even a huge fan of gravy! So easy to prepare and even easier to eat! Thank you for a great recipe!

I don’t cook beef but I was wondering if you could use these ingredients with a pork roast. It seems to be a quick recipe to put together.

I think that would probably work quite well. The ingredients are simple enough that I think they would go with pretty much any kind of meat. If you try it, let me know how it works out.

Looking to make this for Easter Sunday…what do you think I could use to replace the red wine (not something we keep on hand)? Beef broth??
LikeLike
The broth might make it too salty, since there’s a lot of soy sauce in it already. This might sound crazy, but try Cola or Root Beer. I’ve used Cola before with this recipe: http://foodwhine.com/2010/09/cola-pot-roast.html and it worked great! Also, balsamic vinegar is nice with slow-cooked roast, you could try that.

The cola recipe sounds good and I plan on trying but I want to try your original recipe first. I don’t know much about red wines what kind of red wine do you suggest for this recipe ?

I used a Shiraz but I think you could use pretty much any kind of red wine that you like.

Looks amazing! Is shiraz sweet? If not, do you think a sweet red wine would work? How does the flavor of the sauce taste after it’s cooked? Does it have a strong wine flavor?
LikeLike
I think pretty much any wine would work, it doesn’t have a strong wine flavor when it’s cooked.

Can you use cooking wine?

Do you let your roast thaw before you put in the slow cooker for 8 hours? Or do you put it in frozen. I have a frozen roast and was trying to figure out if I need to put on high for a few hours before.

I’ve always used a fresh roast for this recipe, but I’ve heard you can put it in frozen and it will still be cooked in 8-9 hours on low. It might just not be as tender.

You can use tenderizer. It really helps

You don.t have to put any water on the slow cooker to cook the roast

Yes, this recipe doesn’t require water to cook the roast. The water is to make gravy at the end.

I am having my parents over for dinner on Sunday and I am going to try this! What type of red wine should I use?

I tend to use Shiraz or Cabernet because that’s what we usually have on hand, but I think you can use whatever wine you like.

I read where you stated we could use a cola or root beer instead of wine. Can a diet cola be used? Your roast looks so delicious and I will be making it. My home loves roast beef like yours.

Can I cook it faster than 8 hours? Maybe 4 hours on high? I’d like to make it tonight, but I still have to go shopping for the roast! I don’t want to eat dinner at 10 tonight! π

Hi! Sorry I didn’t get back to you sooner, it’s been a busy week. I think the meat wouldn’t be as tender if you cooked on high for 4 hours.

This was so good!! I didn’t have cornstarch so I made a water/flour combo instead, turned out perfectly! Next time I would take it out around the 6.5/7hr mark.

Hi!! I’m going to make this for a group of 10, we have a 6lb roast. Should I just double everything? Or maybe triple so there’s enough liquid for gravy?

Sorry, I was on vacation and missed this comment. Did you end up doubling everything? How did it go?

Do you turn the roast over when its halfway done? Or do you just leave the cover on and dont touch it the full 8 hours? Trying this today and dont want to mess it up!

No need to turn it, just cover it and leave it be.
