Baked Oatmeal

This oatmeal will change your life…or at least your breakfast.

Basic Baked Oatmeal:

1 1/2 cups quick cooking oats
1 tsp baking powder
2 tbsp flax seed meal
1/4 cup honey or brown sugar
3/4 cup milk
1 tsp vanilla
1 egg
1 tbsp melted butter

Preheat oven to 350F. Mix together dry ingredients in a bowl. Mix wet ingredients separately and add them to the dry ingredients. Mix until combined. Pour mixture into a lighlty greased 8×8 pan. Cook for 20-25 minutes until edges are golden brown.

Think of the above recipe as your canvas. This is the base to which you can add pretty much anything your heart desires to create your own masterpiece. Here are a few recipes that I’ve come up with so far:

Raisin Spice Baked Oatmeal
Add 1/4 cup raisins, 1/2 tsp cinnamon, 1/2 tsp nutmeg to the basic recipe.

You can pour milk over it and serve it like regular oatmeal, or once it cools you can cut it into squares for oatmeal on-the-go! It’s perfect for packing in lunches or for a quick nutritious snack.

Peanut Butter Baked Oatmeal
Add 1/2 cup of peanut butter to the basic recipe.

You can serve it with sliced bananas:

…Or with jam:

The boys really liked this one. Their favourite sandwich is peanut butter and jelly, so they thought it was pretty great that they could enjoy it in oatmeal form.

Peaches and Cream Baked Oatmeal
Add 1/2 cup diced canned peaches to the basic recipe.

Try serving it with vanilla yogurt or a splash of cream. I used yogurt and it was amazing!

Chocolate Baked Oatmeal
Add 1 tbsp of unsweetened cocoa powder and 1/4 cup mini chocolate chips.
In honor of World Nutella Day on Feb 5th, I’ve topped this with Nutella. You need to try this, you won’t be sorry! Unless of course you’re allergic to nuts. Then please don’t.
Everyone loved this chocolate oatmeal so much that we couldn’t quite believe it was oatmeal. The boys actually thought they were brownies, and who am I to correct them?
Now go forth and bake oatmeal. Then please share what great creations you come up with.

  • Apple Pie Baked Oatmeal: 1/2 cup diced apples, 1 tsp cinnamon
  • Pumpkin Spice Baked Oatmeal: 1/2 cup canned pumpkin, 1 tsp pumpkin pie spice

    I too have discovered the joys of baked oatmeal. It’s my go to saturday morning breakfast! My fav is dates and walnuts! I warm some milk and put a splash each of vanilla, real maple syrup, and cinnamon. Thanks for the ideas. I can’t wait to try the chocolate version!

    A few years ago I had a version of this at a ladies retreat. I got the recipe and have made it ever since. Your version sounds much more nutritious and it is egg fee, which Is great since I’m avoiding eggs to keep my nursing baby from reacting. Adding pb is great idea and will up the protien value.     I made the apple and cinnamon one this morning – I quite liked it, especially mixed with yogurt. DH didn’t think it was sweet enough (typical of him) but ODD liked it enough to eat most of what was on her plate.

I took your suggestion and tried my own recipe, and made maple pecan oatmeal squares – they are yummy!I subbed the brown sugar for maple sugarAdded 1/3 1/2 cup chopped pecansThen drizzled some maple syrup on top before baking.Thanks for the great idea. I think I might try an almond butter with dried cherry version next …

      I’m sure you could, you would just need to bake it longer. I haven’t actually tried it with regular rolled oats so I’m not sure how much longer it would need.
