Leftover Mashed Potato Gnocchi

Leftover mashed potato gnocchi. So light and fluffy!

If you have leftover mashed potatoes, try making them into delicious potato dumplings known as gnocchi! I’ve tried gnocchi before, but I often find the dough is very sticky and hard to work with, and I inevitably need to use more flour, which can make the gnocchi heavy and chewy. I think maybe the problem was that I used mashed potatoes that had just been cooked. This time, I happened to have leftover mashed potatoes in my fridge, so I tried making gnocchi with it and it worked so much better! I didn’t need nearly as much flour, and the resulting gnocchi were perfectly light and fluffy. My family loved them too. I topped them with a basic homemade meat sauce and a little parmesan cheese. Sorry the photo isn’t that great, it’s getting harder to get good shots now that the sun goes down so much earlier. {UPDATED with a slightly better photo!}. I often take a photo of leftovers the next day in the daylight, but this gnocchi didn’t last until the next day. We gobbled up every last bit of it that night. I know what I’ll be making with my leftover mashed potatoes from now on!

    I’ve been meaning to make gnocchi, but I’ve always been worried about it taking forever. But if I had the leftover mashed potatoes ready to go then voila! I love this idea. Looks like you have a happy family.

    Great posting. I have at least 2 cups of leftover mashed potatoes in the fridge as I type! My mother-in-law’s gnocchi are heavenly pillows and I love them. My husband and I have tried to make them but our gnocchi do not meet our expectations. MiL says to use as little flour as possible, which your posting confirms. I find her instructions sometimes challenging because there are lines like “wait until it feels right”. Dinner plan for tomorrow made!

    Great post inideed! I just made this.They were heavenly! Very light. I made them with left 0ver garlic mashed potatoes and all the flour I had. It must have been quite enough because it was too sticky to roll out. I spooned them out on a floured surface twenty at a time and let them dry a little and dropped them in the boiling water after flattening each with a fork. So light! My fave ever. Thanks for giving the courage to try this. Great pic, by the way. What a cute kid; I couldn’t think of a greater endorsement of your gniocchi. They took less than a minute to cook. Is that normal? thanks again and have a good holiday.

    I had leftover mashed potatoes from Christmas that were exceptional on their own and made this recipe. I made 1 and a half times the recipe and the gnocchi came out fantastic. I will make these every time I have leftover mashed potatoes. May try freezing them, if anyone has tried please post. Thanks for a great recipe!!

    I had leftover cream cheese mashed potatoes and made these with them! they turned out great! I boiled them just until they floated and then fried them in butter with onion and bread crumbs. The hubby said I could definitely make them again, haha! Thanks for the great, quick and easy recipe!

    Just what the doctor ordered for Thanksgiving leftovers! We made a double batch with four cups of garlic mashed potatoes and allowed them to dry out for a few hours in the fridge before boiling. We tried both the balls and the fork-pressed shapes and preferred the pressed ones. Smaller balls, say 3/8″ would probably been great.

    We served them with a vodka cream sauce and they we just a delight. I can only imagine what they’d be like if we added a “saute in butter” step before plating and saucing!

    I have a trick of adding less flour, pouring the sticky dough into a large bag, and then piping them straight into the water while you cut them to size with kitchen shears! It’s less traditional for sure, but saves on time for weeknights or if supper is running late.
