Raise your hand if you love Taco Tuesdays! Ever since the Lego Movie came out, Bennett gets excited when we have tacos on a Tuesday, but there’s never really a bad day for tacos, is there? I love having them on weeknights because they’re so quick — I just set out all the ingredients and everyone makes their own. The kids love having the freedom to choose their own taco toppings, and it makes it a lot easier for me to prepare dinner.
There are countless possibilities for tacos (which I’ll show with my Taco Template), but one version that I love is this Lentil Taco. When you use canned lentils, it literally takes only minutes to make. And no cooking! That’s a big bonus on those hot summer nights that we’ll be seeing in our near future.
For Lentil Tacos: simply mix 1 can of lentils with juice from 1 small lime, then add salt, chili and cumin (or a Taco spice mix) to taste. You can heat it up on the stove or in the microwave, or serve it unheated if you prefer. I like to serve them with lettuce, tomato, salsa and guacamole.
Taco Template
Shell:
- Flour Tortillas
- Corn Tortillas
- Hard Taco Shells
- Lettuce
Base: Combine with juice from 1 small lime, then add salt, chili powder and cumin (or Taco seasoning) to taste.
- Lentils
- Beans (black beans, kidney beans, etc.)
- Chickpeas
- Tofu Ground Round
- Ground, shredded or sliced meat (beef, turkey, chicken, pork, etc)
- Canned Tuna
- Shrimp
- Cooked fish (Salmon, Halibut, Tilapia, Cod, etc)

Vegetable Toppings:
- Tomatoes
- Lettuce
- Onions
- Cilantro
- Avocado
- Cabbage/Cole Slaw
- Kale
- Green Chilies
- Broccoli Slaw

Condiments:
- Salsa
- Sour Cream
- Lime Juice
- Guacamole
Cheese:
- Cheddar
- Monterey Jack
- Queso Fresco
You can even try replacing Mexican flavours with Asian, Indian, Moroccan, or Greek, for example. We love Greek Tacos!
