Grab-and-Go Breakfasts: Egg in a Jar

Here’s the fourth post in my daily grab-and-go breakfast series this week: Egg in a Jar! My kids go crazy for eggs. They would gladly eat eggs for breakfast every morning, but it’s time-consuming to cook up an egg, standing over the stovetop to make sure it doesn’t burn, while I’m trying to get everyone ready for school.

Then I discovered you can microwave eggs. You might be worried they’ll end up rubbery — or worse, that they’ll explode — but I find that if you coat the jar with cooking spray, prick the egg yolk, cover tightly with saran wrap, and cook on 40% power for a little over a minute, the results are pretty decent. This has only been tested in my microwave though, so just a warning that your microwave may yield different results. Sometimes the egg will still pop or “explode” but the jar and plastic wrap contains the mess (make sure you’ve covered it tightly), and the egg is still perfectly good to eat.

I’m not an egg person myself, but the kids were happy to eat these microwaved eggs in a jar. I used a mason jar because I have an abundance of them right now, thanks to my canning adventures with The Canning Kitchen Cookbook, but you can use any microwaveable container.

It’s fun to add some toppings to the eggs. My boys like ketchup, but if that doesn’t float your boat, try cheese, herbs, chives, bacon bits, or whatever else you can think of.

So now you can enjoy eggs on a school morning in no time at all. And if the kids don’t have time to finish their egg at home, they can take the jar with them out the door to school or daycare.

Egg in a Jar

Ingredients

  • 1 egg
  • 1 mason jar
  • Cooking spray
  • plastic wrap

Instructions

  1. Spray a mason jar with cooking spray.
  2. Crack an egg into the jar, and break the yolk with a fork.
  3. Cover the jar tightly with plastic wrap.
  4. Microwave at 40% power for about 1 minute and 20 seconds. If it’s not fully cooked yet, return to microwave to 10 seconds at a time until done.
  5. Let stand for 3-5 minutes, still covered.
  6. Uncover, and add any toppings you’d like (ketchup, hot sauce, cheese, bacon bits, chives, herbs, etc.)
