I’m back today with another grab-and-go breakfast idea for those crazy first mornings back to school. It’s tough getting back into the routine of school mornings, so I’m hoping I can at least make breakfast a little easier for you. As I mentioned in my post yesterday (Peanut Butter, Jelly and Banana Overnight Oats) it’s hard to get my boys to eat breakfast in the morning at the best of times. Rushed school mornings are even harder. If you have this problem with your kids, too, you might want to try breakfast popsicles.
My kids’ reaction was something like this when I offered them one: “I get to eat a popsicle for breakfast?? Is this a trick? Are you sure? Okay then, YES PLEASE!”
This recipe is basically a yogurt parfait, but frozen on a stick. It has layers of yogurt, fruit, and granola. Granola in a popsicle may sound odd, but it’s actually surprisingly good. It’s such a fun and unique way to eat breakfast.
Here’s what you’ll need:
- Yogurt (plain or flavoured)
- Pureed fruit, or jam (I used Epicure Chia Jam)
- Low-Fat Granola (I used Rogers Low-Fat Raspberry Almond Granola)
- Popsicle Molds (I used Tupperware Frozen Treat Makers – affiliate link)
Instructions: Fill the mold 1/3 of the way with yogurt, then add a spoonful of fruit/jam, followed by a spoonful of granola. Top with more yogurt. Place them in the freezer for several hours, until full frozen. Serve for breakfast or snacks.
