My family is weird. None of them like lasagna. I can’t even believe that I’m related to any of those crazies. I mean, what is there not to like about lasagna? It’s just layers upon layers of noodles, delicious sauce, and don’t forget all that melty cheese. I love pretty much everything about lasagna, except for the time and effort that it usually takes to make it. This recipe solves that pesky time-and-effort problem, which makes it my new favourite recipe.
This lasagna can be made without ever having to turn on your oven or even boil noodles. You can have it ready in less than 30 minutes, making it a perfect weeknight meal. I’ve always had to save lasagna for the weekends when I have more time, but not anymore.
Ayla went wild for this meal. She hasn’t expressed a great love for lasagna in the past, but this time it appealed to her. When Cole found out we were having lasagna, he was immediately turned off, but when I finally convinced him to at least take a bite, he didn’t mind it so much. He gave it a “so-so” rating. Bennett and Tony both actually liked it and ate it. That’s not too bad for a family of lasagna-haters.

I’ll have to try this one. I always go the no-boil route when it comes to lasagna noodles anyway, but this is still much quicker than even that shortcut. Have you tried the lasagna soup recipe on Pinterest? I made it a while back and it was really good, although you have to add a LOT more liquid than they call for or it’s just lasagna in a bowl…. which is not bad either 😉
