Quinoa Blueberry Scones

Delightful scones made with nutritious quinoa and blueberries. Try them for breakfast, or a snack with tea or coffee.

2 tbsp butter, melted
2 tbsp honey
1 cup cooked quinoa
3/4 cup milk
1 3/4 cups whole wheat flour
4 tsp baking powder
3/4 cup blueberries

Mix together butter, honey and quinoa (cooled). Add milk slowly and stir until combined. Fold in blueberries. Mix together flour and baking powder, then add to wet ingredients. If the mixture seems too moist, add a little more flour (it depends how moist your quinoa is). The mixture should form a ball of dough. Roll out to 1″ thick and cut in wedges. Bake on a greased and floured sheet at 350°F for 15 to 20 minutes.

These were very moist and tender, and so simple to make if you happen to already have some cooked quinoa hanging around in your fridge. Cooked oatmeal will work for this recipe too. The boys liked them, I think because of the blueberries. They’re big blueberry fans! These are super healthy too, with the quinoa and whole wheat flour. Not much butter in them either because they get most of their moisture from the cooked quinoa. Plus, they’re low in sugar, with only a little honey and the blueberries for sweetness. If they’re not sweet enough for you, try sprinkling sugar on top before baking. I liked them just the way they were though.

    Love the idea of quinoa in scones. But just to clarify a couple of things – Should the butter be cold, room temp or melted? And did you really mean 1 2/4 whole wheat flour? Somehow I think not…unless you were testing our math skills 😉

    Haha, thanks Jan, I guess I wasn’t all there when I wrote that. I’ll correct it for you. Butter should be melted, it should be 1 3/4 cups of flour.

    Yum these sound like a very tasty and healthy snack for Skyla. I’ll have to make sure to make quinoa this week and save a cup for this.Should the quinoa be room temp/cooled. Last time I cooked it for the cookies and was to impatient to cool it so it melted the chocolate chips making it look like a macaroon. But they were still amazing and my friends LOVED them and can’t stop talking about them 🙂

    I made it with cooled quinoa, I’m not sure how they would turn out if it was still hot. It might be ok because there’s no chocolate chips in this to melt!

    okay..i tried making these tonight, i could not get the blueberries to blend in with the dough..it turned into a gigantic mess..and ended up in the garbage….help! how do you get the blueberries to combine?

    Oh I’m sorry to hear that! It’s been a long time since I made these so I can’t really remember how I blended the blueberries with the dough now. I’ll give it a try maybe this weekend and let you know.

    Hmm..I see what you mean! I’ve made some adjustments to the recipe. I think it would help to add the blueberries to the wet ingredients before adding the flour. Plus I think there too many blueberries, I cut it down to 3/4 cup. I also found the dough too dry so increased the amount of milk.

    I made this last week, and mine did not turn out like scones, more like rubber…not sure what i did wrong?..maybe I need more flour next time?
